Naturally Thin

I am watching real houseiwves of NYC and saw Bethanny promote her book Naturally Thin. I bought it, read it and am still waiting to be thin...


The book is good common sense stuff, but I need to hear/ read that common sense stuff again adn again. Lots of recipies! Skinny girl drinks (MArgaritias, Martini's and Pina Coladas) Also good entres, side and deserts!


We made Goat Cheese/Sundried Tomato Chicken Breasts

Serves 6 Ingredients:
6 boneless chicken breasts
1 cup goat cheese
1 tsp. dried Italian herbs
1 tsp. minced fresh Italian parsley
Salt and Pepper
½ C finely chopped sundried tomatoes (packed in oil, drained)
1 C heavy cream
4 cloves minced garlic
4 T olive oil


Combine goat cheese, herbs, and salt and pepper. Make slit down the side of each chicken breast creating a pocket. Spoon a layer of goat cheese mixture inside each chicken breast. Season chicken breasts on both sides with salt and pepper. Using sauté pan on med/high heat, layer bottom with olive oil and place chicken breasts facing up in pan until browned. Turn over and brown the other side then heat until fully cooked. Remove chicken breasts. Add minced garlic, sundried tomatoes and heavy cream to the pan. Add salt and pepper, and scrape all bits off the bottom of the pan. Bring to a boil then simmer for 5 minutes. Spoon sauce over chicken (you may slice to increase portions)


It was REALLY good, and REALLY Easy! Took about 15 minutes TOTAL!!!

I didn't take a picture but ti looked pretty too :) Bethenny made it on Bonnie Hunt last week when Had and I were home sick and it inspired me.

Next week I am making Low Fat Fudge Chocolate Chip Muffins(these are susan sarandon's favorite wheat, egg, dairy free and lowfat treats)

preheat oven to 375 degrees and use nonstick spray on regular sized nonstick muffin tin combine the following:
1 cup unsweetened applesauce
1/2 cup raw sugar
1 tsp vanilla
1/4 tsp. almond extract
3/4 cup oat flour
1/3 cup cocoa powder
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup semisweet vegan choc chips
1 dash cinnamonusing 3 oz. ice cream scoop, evenly scoop into muffin tins and bake for 20 min to an hour. rotating half way through. place toothpick in center. when toothpick comes out clean, muffins are done. allow to fully cool then pop out with a spoon makes 8 muffins


I'll let you know how it turns out. I attempted to make Zuchinni Muffins Sunday... it was bad. very, very bad.... So who knows....

Today is the LAST FULL day of school, so I can blog more soon. I mean play with Had more too
